Located in the vibrant neighborhood of Nuñez, Buenos Aires, La Valiente Pastelería stands as a testament to the seamless fusion of architectural design and the art of gastronomy. Situated at the prominent corner of Av. Cabildo, this extraordinary establishment embodies a captivating design, inviting patrons to embark on a sensory journey that intertwines culinary delights with the rich heritage of "confitería porteña".

Drawing inspiration from the dynamic pulse of Av. Cabildo, the design of La Valiente Pastelería aims to create an oasis, a refuge from the bustling city. By preserving and enhancing the existing architectural elements, such as the majestic columns and intricate capitals, we have crafted an interior space that exudes a sense of history and seamlessly integrates the old with the new.

Upon entering the main salon, guests are greeted by two prominent bars strategically positioned to optimize the flow and functionality of the space. One bar serves as a showcase for our delectable pastries and freshly baked goods, catering to those seeking a quick take-away experience. The other bar takes center stage as the heart of our specialty coffee offerings, enveloping guests in the ambiance reminiscent of a traditional "confitería proteña". Carefully curated seating options abound, from the inviting coffee bar and open "box" areas near the entrance, to communal tables and elegant café-style arrangements. This spatial arrangement allows each guest to experience the space in their own unique way, fostering an atmosphere of dynamism and sophistication.

At La Valiente, we pride ourselves on our unwavering commitment to traceable and honest food production. To reinforce this philosophy, we have meticulously selected a palette of noble materials. Carrara marble takes center stage, providing a stunning backdrop to showcase our culinary creations, while the presence of steel pays homage to our in-house production capabilities. The integration of pinotea wood, adorning the bars and custom-designed furniture, infuses warmth and elegance into the space, while the exposed concrete, discovered during the renovation process, serves as a reminder of the building's architectural legacy.

To complement the design, careful attention has been given to the exterior landscaping, creating a sense of serenity amidst the bustling capital city. The integration of greenery adds a touch of nature, offering patrons an outdoor retreat where they can unwind and indulge in our meticulously crafted coffee and gastronomic offerings.

La Valiente Pastelería está ubicada en el barrio de Nuñez, (Capital Federal, Argentina) en una esquina típica de la Av. Cabildo. Tomando en cuenta la velocidad de esta avenida se trabajó el diseño creando un cierto oasis donde uno puede refugiarse y contemplar de la propuesta gastronómica recreando la memoria colectiva de la confitería porteña.
Siguiendo la misma línea de diseño de La Valiente Panadería (primer local que se proyectó) reciclamos todo su interior resaltando lo preexistente. Entendiendo como los vestigios del espacio coexisten con lo nuevo. Por ejemplo, sus columnas y capiteles que se vuelven protagonistas y terminan siendo un elemento que define el espacio interior.
El salón cuenta con dos barras principales que ordenan el espacio. Una contiene la exhibición de pastelería y panadería para el cliente que consume take away y la otra desarrolla toda la propuesta de cafetería de especialidad con espacios de sitting tipo confitería porteña.
El espacio cuenta con distintas opciones de sitting. En la barra de cafe, en los “box” abiertos de la entrada, mesas comunales, mesas típicas de confitería, barras a la calle. De esta manera se genera un dinamismo espacial donde cada comensal puede volver al local y experimentar el espacio de distintas maneras.
El equipo de “La valiente” se distingue por su compromiso por el trazado de los alimentos y la honestidad de su producto. Para reforzar este concepto se definió la paleta con materiales nobles. El mármol carrara para que resalte el producto, la presencia del acero porque cuentan con su propia fabrica de producción en el local, la pinotea que aparece en las barras y en el mobiliario diseñado especialmente para ellos y el hormigón que se descubrió in situ donde se trabajó con la preexistencia.
Para finalizar se trabajó con el paisajismo que termina de cerrar el concepto de oasis en este local de la Capital del pais dónde todos estan apurados. Pero siempre hay tiempo para disfrutar de un café y una buena propuesta gastronómica.
